Ingredients:
  • 300g Simply Spirals dried pasta
  • 20.00 ml plain flour
  • 500g beef stir-fry strips
  • 27.30 gm olive oil
  • 1 brown onion, halved, thinly sliced
  • 150g cup mushrooms, sliced
  • 2 garlic cloves, crushed
  • 2.50 gm sweet paprika, plus extra large pinch, to serve
  • 22.20 gm tomato paste
  • 1 beef stock cube, crumbled
  • 36.60 gm Worcestershire sauce
  • 65ml Sour Cream, plus extra 2 tbsp, to serve
  • 55g (½ cup) Pizza Blend Shredded Cheese
Instructions:
  • Cook pasta in a pot of seasoned boiling water following instructions on the package until just tender. Save 250ml (1 cup) of the pasta water before draining.
  • In a bowl, coat beef with flour and season generously with salt flakes and freshly ground black pepper. In a large, deep frying pan, heat 2 tsp oil over high heat. Add beef and cook for 3-4 minutes until nicely browned, stirring occasionally. Transfer beef to a plate.
  • Lower heat to medium-high. Add the rest of the oil to the pan. Sauté onion and mushrooms for 3-4 minutes until soft. Stir in garlic and paprika and cook for 1 minute until fragrant. Mix in tomato paste. Add stock cube, Worcestershire sauce, and reserved pasta water, then simmer. Combine beef, sour cream, and pasta. Heat through, season to taste. Transfer mixture to a greased 2-litre baking dish.
  • Preheat the oven grill to high. Top the pasta mixture with cheese and grill until the cheese is golden and bubbling (2-3 minutes). Serve the pasta bake with a dollop of extra sour cream, and a sprinkle of extra paprika and freshly ground black pepper.
