Try this simple yet delicious beef stroganoff for a comforting family meal.
Ingredients:
  • 36.40 gm olive oil
  • 500g Beef Stir-Fry Strips
  • 1 brown onion, finely chopped
  • 200g button mushrooms, thinly sliced
  • 175g pkt Beef Stroganoff Recipe Base
  • 2 tsp Italian Herbs
  • 37.60 gm light sour cream
  • 375g Fettuccine
  • 40.00 ml chopped chives
  • Steamed Dutch carrots, to serve
  • Steamed broccolini, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat half of the oil. Cook the beef in two batches for 3-4 mins until lightly browned. Transfer to a plate.
  • In the same pan, heat the rest of the oil over medium heat. Sauté the onion for 3-4 mins until softened. Then, add the mushrooms and sauté for 2-3 mins until lightly browned.
  • Add the recipe base and herbs, bring to a boil, then add the beef back to the pan. Simmer on low, stirring occasionally for 8-10 minutes until the beef is tender. Finish by stirring in the sour cream and heating through for 1 minute.
  • While the sauce simmers, prepare the pasta in a large saucepan of salted boiling water according to the package instructions until it reaches the desired firmness.
  • Fill each serving bowl with a generous portion of pasta. Spoon the flavorful stroganoff on top and garnish with a sprinkle of fresh chives. Season to taste before serving alongside the carrots and broccolini.
