Indulgent beef stroganoff pie with creamy sour cream mashed potato topping. Delightful!
Ingredients:
  • 1kg gravy beef, cut into 3cm pieces
  • 40.00 ml White Plain Flour
  • 36.40 gm Extra Virgin Olive Oil
  • 1 brown onion, chopped
  • 2 garlic cloves, crushed
  • 5.00 gm smoked paprika
  • 44.40 gm Tomato Paste
  • 23.40 gm wholegrain mustard
  • 255.00 gm beef style liquid stock
  • 200g swiss brown mushrooms, thickly sliced
  • 100g cup mushrooms, thickly sliced
  • 155.10 gm sour cream
  • Fresh chives, chopped, to serve
  • Green beans, steamed, to serve
  • 1.25kg sebago potatoes, peeled, roughly chopped
  • 50g butter, chopped
Instructions:
  • In a large bowl, combine beef with flour and season generously with salt and pepper. Toss well to ensure the meat is evenly coated.
  • In a large flameproof casserole dish, heat oil over medium-high heat. Brown beef in 3 batches for 5 to 6 minutes until golden. Transfer to a heatproof bowl.
  • - Saute onion until softened, then add garlic and paprika. - Stir in tomato paste, mustard, and stock, bringing to a boil. - Return beef to the dish, cover, and simmer for 1.5 hours. - Remove lid and simmer for another hour. - Add mushrooms and season with salt and pepper. - Simmer uncovered until beef is very tender, about 30 minutes. - Remove from heat and stir in sour cream.
  • Preheat oven to 200C (180C fan-forced).
  • To make the Mash Topping, start by simmering the potatoes in a pot until very tender. Drain them and then mash in sour cream and half of the butter until smooth. Season with salt and pepper for extra flavor.
  • Spoon the beef mixture into a baking dish and top it with a generous layer of mashed potatoes, ensuring the filling is fully covered. Scatter small pieces of the remaining butter on top. Bake for 25 minutes, or until the top is beautifully golden. Let it stand for 10 minutes before garnishing with freshly chopped chives. Serve with a side of beans.
