Beef tortilla stack

Delicious untested member recipe.
Ingredients:
  • 750g beef mince
  • 6 tortilla sheets
  • 250.00 ml light tasty cheese, grated
  • 250.00 ml onion, finely chopped
  • 1 tsp garlic, crushed
  • 125.00 ml corn kernels
  • 250.00 ml small capsicum, diced
  • 400g can crush tomatoes
  • 66.60 gm tomato paste
  • 375.00 gm water
  • 5.10 gm beef style stock powder
  • 35g seasoning
Instructions:
  • Preheat your oven to 180C.
  • In a large saucepan, brown the mince. Once cooked, drain off the fat and set aside. Add all remaining ingredients to the saucepan, excluding the tortilla sheets and cheese. Bring the mixture to a boil, then let it simmer for 10 minutes. Remove 1 cup of the mince sauce and set it aside.
  • Prepare the quiche dish by greasing it. Begin layering with 1 tortilla sheet as the base and generously spread 1 1/2 cups of mince sauce over it. Be sure to sprinkle a moderate amount of cheese to avoid overpowering saltiness. Continue layering tortilla sheets and repeating the process until all sheets are stacked.
  • Place the final tortilla sheet on top, then generously spread the reserved mince sauce over it. Finish by sprinkling a generous amount of cheese on top.
  • Roast in the oven for 30 minutes. Enjoy alongside butternut squash, potato wedges, and a crispy salad.
