Michelle Bridges' low-calorie beef schnitzel steak tortillas with zesty avocado salad. Only 408 calories per serving.
Ingredients:
  • 450g pkt beef schnitzel steak
  • 40g pkt burrito spice mix
  • Extra-light olive oil cooking spray
  • 4 light tortillas
  • 1/2 small iceberg lettuce, thinly shredded
  • 300g jar mild salsa
  • 1 avocado, sliced
  • 2 Lebanese cucumbers, halved lengthways, thinly diagonally sliced
  • 250.00 ml small fresh coriander sprigs
  • Juice of 1 lemon
Instructions:
  • Heat up a large chargrill pan on medium-high heat.
  • Combine all the ingredients for the avocado salad with care, ensuring they are well mixed. Season to your liking.
  • Coat both sides of the steak evenly with the spice mix and lightly spray with oil. Grill for 1 minute on each side until golden and just cooked. Slice into 8 pieces, transfer to a plate, and loosely cover with foil to keep warm.
  • Lightly coat both sides of the tortillas with oil and chargrill in two batches for 5 seconds per side until they are warmed and have a golden hue. Place them on serving plates.
  • Spread a generous layer of lettuce, steak, salsa, and avocado salad over the tortillas. Enjoy your delicious creation!
