Transform affordable ground beef into a delicious family-friendly dish.
Ingredients:
  • 18.20 gm olive oil
  • 1 red onion, finely chopped
  • 1 red capsicum, chopped
  • 2 garlic cloves, crushed
  • 500g beef mince
  • 420g can Mexican chilli beans
  • 4 x 20cm flour tortillas
  • 165.00 ml grated cheddar cheese
  • Sour cream, to serve
  • Guacamole, to serve
Instructions:
  • In a large non-stick frying pan over medium heat, sauté onion, capsicum, and garlic in oil for 3-4 minutes until tender. Increase heat to medium-high, add mince, and cook for 5 minutes, stirring occasionally, until browned.
  • Stir in tomato paste, 1/4 cup of cold water, and beans until well blended. Simmer until slightly thickened, about 3-4 minutes.
  • Preheat the oven to 200°C. Lightly grease a 20cm (base) springform pan that is 6cm deep. Place the pan on a baking tray. Lay one tortilla in the base of the pan and spoon one-third of the mince mixture over it. Repeat the layers twice with remaining tortillas and mince mixture, finishing with a tortilla. Sprinkle cheese on top and bake for 20-25 minutes until golden. Cut into wedges and serve with sour cream and guacamole.
