Spicy and sweet beef dish with cumin, turmeric, orange juice, and plump prunes.
Ingredients:
  • 40g (1/4 cup) plain flour
  • 1.25kg beef casserole or blade steak, cut into 5cm pieces
  • 80ml (1/3 cup) olive oil
  • 2 large brown onions, halved, thinly sliced
  • 70g (1/4 cup) tomato paste
  • 1 tsp ground turmeric
  • 6.25 gm ground cumin
  • 500ml (2 cups) fresh orange juice
  • 375ml (1 1/2 cups) beef stock
  • 180g (1 cup) pitted prunes
  • 400g green beans, trimmed
Instructions:
  • Spread a layer of flour on a plate. Season generously with salt and pepper. Put the beef on the plate and mix it well to coat it with the seasoned flour. Shake off any extra flour before cooking.
  • In a large flameproof casserole dish over medium-high heat, heat 2 tablespoons of oil. Brown half the beef by cooking it for about 5 minutes, turning occasionally. Transfer the beef to a plate. Repeat the process with 1 tablespoon of oil and the remaining beef, making sure to reheat the dish between batches.
  • Heat the rest of the oil in the dish. Saute the onion, stirring frequently, for 5 minutes until softened. Stir in the tomato paste, turmeric, and cumin, cooking for 1 minute until fragrant. Add back the beef, pour in the orange juice, stock, and prunes to the pan. Bring to a simmer.
  • Simmer the dish on very low heat, partially covered, for 1 hour. Then add the beans and continue cooking, covered, for another hour or until the meat and beans are tender. Finally, season with salt and pepper before serving.
