Elevate corned beef with zesty orange and aromatic fennel for a flavorful twist.
Ingredients:
  • 1.2kg Corned Beef Silverside
  • 1 large brown onion, quartered
  • 40.00 ml malt vinegar
  • 2 tsp mustard seeds
  • 2 tsp fennel seeds, lightly crushed
  • 55g brown sugar
  • 25g butter, chopped
  • 2 garlic cloves, thinly sliced
  • 125ml orange juice
  • 1 bunch Dutch carrots, trimmed
  • 2 small turnips, peeled, cut into wedges
  • 2 celery hearts, quartered (see notes)
  • 12 baby potatoes, halved
Instructions:
  • In a large saucepan, combine beef, onion, vinegar, mustard seeds, half of the fennel seeds, and 1 tablespoon of sugar. Cover with water and bring to a boil over medium-high heat. Simmer covered on low for 1 1/2 hours until beef is tender. Let it stand covered for 15 minutes before serving.
  • After draining the beef, save 1/2 cup (125ml) of the cooking liquid and set the beef aside on a plate covered with foil. Clean the pan. Melt butter over medium-high heat, then cook garlic and remaining fennel seeds for 2 mins. Stir in orange juice and remaining sugar, bringing it to a boil. Simmer on low heat for 2 mins.
  • Place the beef back in the pan and cook for 5 minutes until it's nicely coated in glaze. Then transfer the beef to a plate and keep it warm. In the same pan, cook the carrot, turnip, celery, and potato over high heat for 5 minutes. Pour in the reserved cooking liquid and cook covered for 10 minutes until the vegetables are tender. Serve with the beef.
