Beef with rocket and parmesan salad

Indulge in juicy steaks paired with velvety mashed potatoes and peppery rocket salad for a satisfying weeknight dinner.
Ingredients:
  • 1 bunch rocket, trimmed, rinsed
  • 50g shaved parmesan
  • 60ml mayonnaise
  • 37.60 gm light sour cream
  • 475g container potato mash
  • 4 (150g each) beef porterhouse steaks, excess fat trimmed
Instructions:
  • Mix the arugula and Parmesan together, then set aside. Whisk together mayonnaise, sour cream, and 2 tablespoons of warm water.
  • Warm the potato mash following the packet directions.
  • Heat a chargrill pan over medium-high heat. Cook the steak for 3-4 minutes on each side for a medium doneness. Then, transfer the steak to a plate and cover it with foil to rest.
  • Present the mashed potatoes alongside the steak and arugula salad, topped with a drizzle of mayonnaise, for added flavor.
