Indulge in succulent steaks paired with stir-fried silver beet for a satisfying weeknight dinner.
Ingredients:
  • 1 bunch rainbow silverbeet, ends trimmed
  • 4 beef steaks
  • 36.40 gm extra virgin olive oil
  • 2 garlic cloves, crushed
  • Salt & freshly ground pepper
  • Mashed potato, to serve
Instructions:
  • Trim off the stalks. Halve the stalks lengthwise and repeat with the silverbeet leaves. Wash and gently dry with a paper towel.
  • Preheat a large non-stick pan over medium-high heat. Sear the steak for 4-5 minutes on each side for medium doneness. Place on a plate, cover with foil to keep warm, and let it rest.
  • Heat oil in a hot frying pan or wok. Cook half of the silverbeet leaves, tossing, for 2-3 minutes until wilted. Transfer to a bowl and cook the remaining silverbeet, stalks, and garlic the same way.
  • Add the silverbeet back to the pan, toss it to combine, and season generously with salt and pepper. Serve alongside the chargrilled beef and mashed potatoes.
