Beef-Barley Stew

Indulge in a savory beef and barley stew with rich Progresso® broth and robust vegetables for a satisfying meal.
Ingredients:
  • 1 lb extra-lean (at least 90%) ground beef
  • 2 cups Progresso™ beef flavored broth (from 32-oz carton)
  • 2/3 cup uncooked barley
  • 2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (14.5 oz) whole tomatoes, undrained
  • 1 can (8 oz) sliced water chestnuts, undrained
  • 2 cups frozen mixed vegetables
Instructions:
  • Preheat oven to 350°F. Lightly spray a 10-inch nonstick skillet with cooking spray. Cook beef and onion in the skillet over medium heat for 7 to 8 minutes, stirring occasionally, until beef is browned. Drain any excess fat.
  • Combine the beef mixture and all remaining ingredients, except frozen vegetables, in a 3-quart casserole dish without greasing it. Break up the tomatoes while mixing.
  • After baking for 30 minutes, gently incorporate the frozen vegetables. Cover again and bake for an additional 30 to 40 minutes until the barley reaches desired tenderness.
