Spicy beef chili with corn and black beans - ready in 25 minutes, perfect for family dinner.
Ingredients:
  • 1 lb ground beef round
  • 2 teaspoons salt-free chili powder blend
  • 1 package (14 oz) frozen seasoned corn and black beans
  • 1 can (14 oz) reduced-sodium beef broth
  • 1 can (15 oz) seasoned tomato sauce for chili
  • Reduced-fat sour cream, if desired
  • Sliced green onions, if desired
Instructions:
  • In a 4-quart Dutch oven, sauté beef and chili powder mixture over medium-high heat for 6 minutes until beef is fully cooked, stirring occasionally. Drain excess fat.
  • Combine frozen corn and beans with broth and tomato sauce in a pot. Bring to a boil, then lower the heat, cover, and simmer for 10 minutes. Uncover and continue simmering for an additional 5 minutes, stirring occasionally.
  • Divide the chili evenly among 6 bowls and garnish with sour cream and onions.
