Savory taco beef stew with corn and black beans, topped with sour cream and cheddar.
Ingredients:
  • 1 pound ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, undrained
  • 1 (6 ounce) can tomato paste
  • 1.5 cups water
  • 0.5 cup sour cream
  • 2 (8 ounce) packages shredded Cheddar cheese
Instructions:
  • In a large skillet over medium high heat, cook the ground beef until browned. Drain the excess fat. Stir in taco seasoning and simmer covered on low heat for 10 minutes.
  • Start by gently layering the corn, beans, tomato paste, and water in a slow cooker. Stir until well combined. Next, add the seasoned meat and sour cream. Increase heat to high and simmer for 20 minutes. Serve in bowls and top with shredded cheddar cheese for a delightful finish.
