Vibrant black bean and corn salad with zesty lime-garlic dressing. Perfect side dish for any meal.
Ingredients:
  • 0.5 cup olive oil
  • 0.33333334326744 cup fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 0.125 teaspoon ground cayenne pepper
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1.5 cups frozen corn kernels
  • 1 avocado - peeled, pitted and diced
  • 1 red bell pepper, chopped
  • 2 tomatoes, chopped
  • 6 green onions, thinly sliced
  • 0.5 cup chopped fresh cilantro
Instructions:
  • Combine olive oil, lime juice, garlic, salt, and cayenne pepper in a sealed jar. Shake vigorously until the dressing is fully mixed.
  • In a large salad bowl, toss together beans, corn, ripe avocado, bell pepper, tomatoes, green onions, and fresh cilantro.
  • Give the dressing another good shake, drizzle it over the salad, and toss everything together until fully coated.
