Easy skillet dish with corn, black beans, peppers, and flavorful seasonings. Perfect with tacos, enchiladas, fish, or burgers.
Ingredients:
  • 4 ears corn, shucked and kernels removed
  • 1 small red bell pepper, diced
  • 0.25 cup chopped red onion
  • 1 large jalapeno pepper, seeded and minced
  • 1 tablespoon lime juice
  • 2 teaspoons chili powder
  • salt and freshly ground black pepper to taste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 0.25 cup chopped cilantro
Instructions:
  • Combine corn kernels, bell pepper, onion, jalapeño, lime juice, chili powder, salt, and pepper in a bowl, mixing until thoroughly blended.
  • In a large skillet over medium-high heat, sauté the corn mixture until the onion turns translucent, which should take about 5 to 6 minutes. Add the black beans and cook until heated through, around 2 minutes. Finish by sprinkling cilantro over the dish before serving.
