Create a flavorful one-pot meal by combining rice, pasta, ground beef, and vibrant veggies.
Ingredients:
  • 1 pound lean ground beef
  • 2 1/2 cups hot water
  • 3/4 cup baby-cut carrots, cut lengthwise in half
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon pepper
  • 1 package (6.4 ounces) four-cheese rice and pasta blend
  • 1 1/2 cups broccoli flowerets
  • 1/2 cup cherry or grape tomatoes, cut in half
Instructions:
  • In a large skillet over medium heat, brown the beef for 8 to 10 minutes, stirring occasionally. Drain any excess fat.
  • Mix together water, carrots, butter, pepper, rice mixture, and seasoning packet with beef. Bring to a boil, then lower the heat. Cover and simmer for approximately 15 minutes until the rice and carrots are nearly tender.
  • Add the broccoli and gently mix it in. Cover the pot and cook for 5 minutes until the broccoli is tender-crisp. Then, add the tomatoes and cook uncovered for about 1 minute until they are heated through.
