Beef Taco Rice Skillet

30-minute Mexican skillet dinner with seasoned ground beef, rice, veggies, and corn. Flavorful and satisfying!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 1/2 cups water
  • 1 cup thick & chunky salsa
  • 1 cup frozen whole kernel corn (from 1-lb bag)
  • 1 1/2 cups uncooked instant rice
  • 3/4 cup shredded taco-seasoned cheese (3 oz)
  • 1 cup shredded lettuce
  • 1 medium tomato, chopped (3/4 cup)
  • Sour cream, if desired
Instructions:
  • Cook the beef in a 10-inch skillet over medium heat for 8 to 10 minutes, stirring occasionally, until browned; then drain any excess fat.
  • Add the taco seasoning mix, water, salsa, and corn. Bring to a boil, then mix in the rice. Boil for 1 minute, then remove from heat. Cover and let it sit for 8 minutes.
  • Fluff the rice mixture with a fork and sprinkle with cheese. Cover and let stand for 1 to 2 minutes to melt the cheese. Surround the edge of the skillet with lettuce and create a circle of tomatoes next to the lettuce. Serve with sour cream on the side.
