Savory taco beef, seasoned rice, and gooey cheese make a customizable meal that can be enjoyed in tacos, lettuce wraps, or on its own.
Ingredients:
  • 2 (8.8 ounce) pouches UNCLE BEN'S® Ready Rice® Garden Vegetable
  • 1 (1.25 ounce) package sodium-reduced taco seasoning
  • 0.75 cup water
  • 0.5 cup shredded Cheddar cheese, divided
  • 2 roma (plum) tomatoes, seeded and chopped
  • 1 avocado - peeled, pitted and sliced
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly oil a 10-inch round baking dish.
  • Preheat a 10-inch non-stick skillet over medium heat. Brown ground beef, breaking it up, for approximately 10 minutes until fully cooked. Remove excess fat.
  • Combine tomatoes, taco seasoning, and water in a pot and bring to a gentle simmer for about 5 minutes.
  • Prepare the rice as instructed on the package.
  • Combine the ground beef mixture, rice, and 1/4 cup of cheese until well mixed. Transfer the mixture into the prepared baking dish.
  • Sprinkle the remaining cheese over the top and bake until it's perfectly melted and bubbly, approximately 10 to 15 minutes.
  • Top with chopped tomatoes or avocado slices, as desired.
