Taco-inspired bake with ground beef, rice, tomatoes, chili, and Cheddar cheese - simple and delicious!
Ingredients:
  • 1 serving cooking spray
  • 0.75 pound ground beef
  • 0.33333334326744 cup diced onion
  • 1 clove garlic, minced
  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 1 (8 ounce) can tomato sauce
  • 1 cup long-grain white rice
  • 1 cup water
  • 1 (1.25 ounce) package taco seasoning
  • 1 sheet aluminum foil
  • 0.5 (8 ounce) package grated sharp Cheddar cheese
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a 7x11-inch casserole dish with cooking spray.
  • In a skillet, brown ground beef over medium heat, breaking it into crumbles for about 5 minutes. Add onion and garlic, cook for an additional 5 minutes. Stir in diced tomatoes, green chiles, tomato sauce, rice, water, and taco seasoning. Transfer mixture to a casserole dish, cover with foil.
  • After baking for 30 minutes in the preheated oven, uncover, sprinkle evenly with Cheddar cheese, and bake for an additional 15 minutes until cheese is golden and lightly browned.
