Beer-infused beef stew with a spicy kick of chili sauce and a hint of sweetness from brown sugar.
Ingredients:
  • 3.5 pounds beef stew meat, cut into 1 1/2 inch pieces
  • 2 large potatoes, chopped
  • 1 cup chopped carrots
  • 0.75 cup chopped celery
  • 0.75 cup chopped onion
  • 3 cloves garlic, chopped
  • 1 tablespoon dried basil
  • 1 tablespoon dried thyme
  • 1 cup chili sauce
  • 1 cup beer
Instructions:
  • Warm the oil in a skillet over medium heat. Toss the beef stew meat and flour in a large resealable plastic bag to coat. Add the coated meat to the skillet and cook for about 1 minute until browned.
  • Combine the potatoes, carrots, celery, onion, and garlic in a slow cooker. Arrange the browned beef on top of the vegetables and sprinkle with basil and thyme.
  • Combine the chili sauce, beer, and brown sugar in a bowl, then drizzle over the meat in the slow cooker.
  • Cook covered in the slow cooker on Low for 8 hours or on High for 2 hours.
