Beer-braised Flemish stew: Coat meat in flour, sear in butter, simmer in beer-thyme broth with bay leaves. Enjoy with fries, salad, or green beans. Ideal for cozy winter nights.
Ingredients:
  • 2 pounds beef stew meat, cut into 1 inch cubes
  • 0.375 cup all-purpose flour
  • 4 onions, diced
  • 1.6666699647903 cups water
  • 1 sprig fresh thyme
  • 2 bay leaves
  • salt and ground black pepper to taste
  • 1 (12 fluid ounce) can or bottle brown beer
  • 1 slice bread
  • 1 tablespoon prepared mustard
  • 2 carrots, cut into 1 inch pieces
  • 1 tablespoon white wine vinegar
  • 2 tablespoons brown sugar
Instructions:
  • Coat the meat in flour. Melt butter in a Dutch oven over medium heat. Sear the meat in the butter, then add onions and cook until glazed. Mix in water and vinegar. Season with thyme, bay leaves, and salt and pepper. Cover and simmer for 30 minutes.
  • Add the beer to the mixture, spread mustard on the bread, and combine with carrots and meat. Cover and simmer for 30 minutes, then incorporate at least two tablespoons of brown sugar (feel free to add more to taste).
