Ingredients:
  • 270.00 gm brown sugar
  • 250g butter, softened
  • 6.25 gm mixed spice
  • 3.75 gm cinnamon
  • 687.50 ml plain flour
  • 10.00 gm baking powder
  • 108.90 gm raspberry jam
  • 56.25 gm white sugar
  • red food colouring
  • 150.00 gm pure icing sugar
  • 20.60 gm milk
  • 5.00 gm butter, melted
Instructions:
  • Combine sugar, butter, and egg in a food processor until smooth. Add mixed spice, cinnamon, 1 3/4 cups flour, and baking powder; pulse until mixed. Add the rest of the flour and pulse until a dough forms. Transfer dough to a work surface.
  • Divide the dough in half and shape each half into a 10cm (diameter) disc. Wrap each disc separately in plastic wrap and refrigerate until firm, about 30 minutes.
  • Preheat your oven to a toasty 180°C, and get those 4 baking trays lined with parchment paper for easy cleanup later.
  • Roll out each pastry disc to a 5mm thickness between 2 sheets of baking paper. Use a 6cm fluted cutter to cut out biscuits. Combine any remaining dough, and repeat the process until you have 56 biscuits. Arrange biscuits on trays. Bake two trays at once for 10 to 15 minutes until they turn light golden. Allow them to rest for 5 minutes before moving to a wire rack to cool.
  • Spread a luscious layer of jam on half of the biscuits, then create delightful jam-filled sandwiches with the remaining biscuits.
  • Create vibrant colored sugar: Place sugar in a resealable bag and add 1 to 2 drops of red food coloring. Massage the bag with your hands until the sugar is evenly tinted. Transfer the colorful sugar to an airtight jar for storage.
  • Prepare icing: Combine sifted icing sugar, milk, and butter in a bowl. Mix until smooth and easily spreadable. Adjust the consistency by adding more milk if needed. Apply the icing on top of the biscuits, then garnish with colored sugar before serving.
