Slow-Cooker Beef Carbonnade with Potatoes

Belgian beer adds rich flavor to this beef stew, a delicious twist on traditional French recipes.
Ingredients:
  • 1 medium onion, sliced
  • 8 small red potatoes, cut into fourths
  • 2 1/2-pound beef round steak, cut into 8 serving pieces
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package (1.8 ounces) tomato beef flavor (oxtail) soup mix
  • 1 can (12 ounces) beer
Instructions:
  • In a 3 1/2- to 4-quart slow cooker, layer the onions, potatoes, and beef. Sprinkle the beef with brown sugar, nutmeg, salt, pepper, and dry soup mix. Pour the beer over everything in the slow cooker.
  • Slow cook, covered, on low heat for 8 to 10 hours until the beef is tender.
  • Drizzle pan juices over beef before serving.
