Indulge in gourmet mussels with a side of crusty bread.
Ingredients:
  • 1 celery stalk, thinly sliced on an angle
  • 1 small leek (white part only), halved, sliced
  • 250ml beer
  • 1 bay leaf
  • 42.00 gm lemon juice
  • 6 thyme sprigs
  • 1kg black mussels, scrubbed, debearded
  • 62.50 ml chopped flat-leaf parsley
  • 400g grainy bread, to serve
Instructions:
  • In a large pan over medium-high heat, heat oil. Sauté celery, leek, and garlic for 1 minute until leek softens. Pour in beer, add bay leaf, lemon juice, and thyme; bring to a boil. Add mussels, cover, and cook for 5 minutes until they open (discard any closed ones). Finish by stirring in fresh parsley and serve with crusty bread.
