Indulgent beer cheese soup with bacon bits in a creamy broth, infused with onion, garlic, and Worcestershire sauce.
Ingredients:
  • 1 tablespoon margarine
  • 0.5 cup chopped onion
  • 0.5 teaspoon minced garlic
  • 1 (12 fluid ounce) can or bottle light beer
  • 1 (14.5 ounce) can chicken broth
  • 3 tablespoons cornstarch
  • water
  • 2 cups half-and-half
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • In a 4 1/2-quart soup pot over medium heat, melt margarine. Add onion, Worcestershire sauce, and garlic, stirring. Increase heat to high and pour in beer. Boil for about 3 minutes until alcohol evaporates. Add broth, bring soup to a boil, then simmer over medium-low heat.
  • Mix the cornstarch and water in a small bowl until well combined and smooth. Let it sit for later use.
  • Combine half-and-half and cheese into the soup, stirring constantly until the cheese has melted. Incorporate the cornstarch mixture, stirring continuously until the soup thickens, approximately 2 minutes. Finish by garnishing with bacon bits.
