Beer-Cheese Soup

Try this quick and tasty beer and cheese soup topped with popcorn. Ready in just 25 minutes!
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 small onion, chopped (1/4 cup)
  • 1 medium stalk celery, thinly sliced (1/2 cup)
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground mustard
  • 1 can or bottle (12 oz) regular or nonalcoholic beer
  • 1 cup milk
  • 2 cups shredded Cheddar cheese (8 oz)
  • Popped popcorn, if desired
Instructions:
  • In a 2-quart saucepan over medium heat, melt butter. Sauté onion and celery in the butter for about 2 minutes, stirring occasionally, until tender.
  • Combine flour, pepper, and mustard, then gradually add beer and milk. Heat the mixture over medium heat, stirring constantly until it boils. Let it boil and stir for 1 minute, then lower the heat to low.
  • Slowly incorporate the cheese into the mixture over low heat, stirring consistently until it melts. Serve each portion with a topping of popcorn.
