Beer soup - hearty, perfect for game day.
Ingredients:
  • 2 tablespoons minced onion
  • 1.5 tablespoons Worcestershire sauce
  • 1 (12 fluid ounce) can or bottle light beer
  • 1.75 cups chicken broth
  • 1 teaspoon ground mustard
  • 2 cups half-and-half cream
  • 3 cups shredded Cheddar cheese
  • 0.25 cup flour
  • 0.25 cup cornstarch
  • 0.25 cup water
  • salt and pepper to taste
Instructions:
  • In a saucepan over medium heat, let the butter melt until it sizzles. Sauté the onion and garlic until the onion softens, approximately 5 minutes. Add Worcestershire sauce and beer, let it come to a boil for 3 to 5 minutes. Mix in chicken broth and mustard. Lower the heat to medium-low and slowly pour in the half-and-half while stirring continuously.
  • Combine shredded Cheddar cheese and flour in a bowl, then gradually stir into the liquid mixture until melted.
  • Combine cornstarch and warm water in a small bowl, whisk until smooth, then mix into the cheese blend. Season with salt and pepper, heat and stir until thickened. Serve while hot.
