Beer-Braised Pork Chops

Indulge in succulent pork chops smothered in decadent beer gravy for a satisfying, comforting meal.
Ingredients:
  • 2 tablespoons olive oil
  • 1 leek (white and light green part), thinly sliced (about 1 cup)
  • 4 bone-in pork loin chops, 3/4 inch thick (about 1 1/2 lb)
  • 3/4 cup stout or dark beer
  • 1 tablespoon Gold Medal™ all-purpose flour
Instructions:
  • In a 12-inch skillet, warm up 1 tablespoon of oil over medium-high heat. Cook leeks for 3 to 5 minutes, stirring often, until they are tender. Remove the leeks from the skillet and set them aside for later use.
  • Season both sides of the pork chops with a pinch of salt and pepper. In the same skillet, warm the remaining 1 tablespoon of oil over medium-high heat. Sear the pork chops for 5 to 6 minutes, flipping once, until they develop a golden crust on each side. Top the pork with leeks, pour the beer around the pork, then bring it to a boil. Lower the heat, cover, and let it simmer for 45 to 50 minutes until the pork is tender. Once done, gently remove the pork from the skillet and cover it to retain warmth.
  • Combine flour with 1/4 cup hot juices in a small bowl. Transfer mixture to skillet and cook over medium heat for 5 to 6 minutes, whisking constantly, until gravy thickens and bubbles.
  • Ladle the rich and savory gravy generously over the perfectly seared pork chops.
