Beer-braised pork loin with a flavorful onion and carrot gravy.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1 (5 pound) boneless pork loin roast
  • 3 cups chopped onion
  • 5 carrots, chopped
  • 1 (12 fluid ounce) can or bottle beer
  • 2 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 4 whole cloves
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a heavy pot or dutch oven, heat vegetable oil over medium-high heat. Sear the pork in the hot oil until browned on all sides, approximately 10 minutes. Remove the roast from the pot.
  • Reserve just 3 tablespoons of the grease in the pot. Sauté the onion and carrots until softened, approximately 5 minutes.
  • Fold the beer, salt, pepper, bay leaf, and cloves into the onion mixture gently.
  • Cover the pot with the pork roast inside.
  • Roast in the preheated oven until the pork is tender and fully cooked through, approximately 2 hours.
  • Place the roast on a serving platter and gently cover it with aluminum foil. Discard the bay leaf from the vegetables.
  • Transfer the beer and vegetable mixture from the Dutch oven to a blender, making sure not to fill it more than halfway. Secure the blender lid with a folded kitchen towel, then pulse a few times to get the vegetables moving. Blend until smooth.
  • In a saucepan over medium-high heat, bring the pureed sauce to a boil, stirring often, until thickened, for about 5 minutes. Serve by spooning the sauce over the pork roast.
