Originating in Buffalo, New York, these iconic chicken wings are brined with beer, brown sugar, and salt for maximum flavor before being coated in classic Buffalo seasonings. Oven-fried for a lighter twist, these irresistible wings are perfect for any occasion, paired with ranch or blue cheese dressing, and served with celery. Simplify your game night or gathering with this easy, flavorful recipe.
Ingredients:
  • 1 tablespoon packed brown sugar
  • 1 tablespoon coarse salt
  • 1 bottle (12 oz) beer
  • 2 lb fresh or frozen (thawed) chicken wing sections
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons paprika
  • 1/4 cup butter
  • 1/4 cup red pepper sauce
Instructions:
  • Preheat oven to 350°F and cover a baking sheet with foil.
  • Combine brown sugar, salt, and beer in a large bowl and whisk until smooth. Add chicken wings and toss gently to coat. Refrigerate for 30 minutes to allow the flavors to meld and the wings to brine.
  • Combine onion powder, garlic powder, and paprika in a large resealable plastic bag. Remove chicken from brine, pat dry with paper towels, and add to the bag. Shake well to coat evenly, then transfer chicken to a cookie sheet.
  • Melt butter in a 1-quart saucepan. Mix in pepper sauce and bring to a simmer. Drizzle the flavorful mixture over the wings.
  • Bake for 30 to 35 minutes until chicken juices run clear when the thickest part is pierced (165°F). Optionally, drizzle with extra pepper sauce after baking.
