Grilled Beer-Brined Whole Chicken

Brined chicken: Juicy, flavorful, game-changer for grilling.
Ingredients:
  • 1/2 cup salt
  • 2 tablespoons sugar
  • 3 teaspoons chili powder
  • 4 1/2 cups water
  • 1 can or bottle (12 oz) beer
  • 1 whole chicken (3 1/2 lb)
Instructions:
  • To create the brine, combine salt, sugar, and chili powder in a 3-quart saucepan. Add 1 1/2 cups of water and heat over medium heat until boiling, while stirring frequently. Reduce heat to medium-low and cook for 2 to 4 minutes, stirring occasionally until salt is mostly dissolved. Remove from heat and mix in the remaining 3 cups of water and the beer. Allow it to cool to room temperature, stirring occasionally, for about 20 minutes until all the salt is fully dissolved.
  • Remove and discard the neck and giblets from the chicken, then rinse it with cold water. Place the chicken in a large resealable plastic bag and add the brine. Seal the bag, removing any excess air, ensuring the brine covers the chicken. Refrigerate in a bowl for 5 to 6 hours to marinate.
  • Preheat your grill following the manufacturer's instructions for indirect grilling. Take the chicken out of the brine and discard the brine. Insert a meat thermometer into the thickest part of the inner thigh without touching the bone. Put the chicken over the unheated part of the grill and cover. Grill over medium heat for 1 1/4 to 1 3/4 hours until the thermometer shows 180°F and the legs can be easily lifted or twisted.
