Orange Grilled Beer-Can Chickens

Grill whole chickens with zesty orange and malty beer for juicy, flavorful meat.
Ingredients:
  • 2 whole chickens (about 4 lb each), washed, dried and giblets removed
  • 4 teaspoons olive oil
  • 4 to 6 tablespoons seasoned salt or dry rub of your choice
  • 2 cans (12 oz each) beer
  • 4 cloves garlic
  • 2 oranges, each cut in half and 1 half cut into quarters
Instructions:
  • Prepare the grill for indirect grilling. Massage the chickens with oil, then generously season each chicken, including the cavities, with seasoned salt.
  • Pour out half of the beer from each can, leaving the rest inside. Add 2 garlic cloves to each can. Place a chicken over each can by sliding it down onto the can. Insert 1 quarter of an orange into the top cavity of each chicken. Place an ovenproof meat thermometer into the thickest part of the inside thigh muscle of each chicken, ensuring it doesn't touch the bone.
  • Carefully balance the chickens on beer cans and position them on the grill over indirect medium heat. Cover the grill and cook for approximately 1 hour and 30 minutes, or until a meat thermometer registers at least 165°F and the chicken legs move easily when lifted or twisted.
  • Place the halved oranges and remaining quarters, cut side down, on the grill, cover, and grill for 3 to 5 minutes.
  • Take the chickens and oranges off the grill. Allow the chickens to rest on the beer cans for 10 to 15 minutes before removing the cans and carving the chickens. Squeeze the juice of 2 orange halves over the chickens before serving; serve the remaining orange halves on the side.
