Orange Soda Grilled Chicken

Delicious orange soda chicken, ideal for a family BBQ.
Ingredients:
  • 1 (3 1/2 to 4-lb.) whole roasting chicken
  • 1 teaspoon coarse salt
  • 1 teaspoon brown sugar
  • 1 teaspoon chili powder
  • 1/4 cup orange marmalade
  • 1 (12-oz.) clean can orange-flavored carbonated beverage
  • 1/3 cup orange marmalade
  • Reserved carbonated beverage
  • 2 teaspoons oil
Instructions:
  • Preheat the grill for indirect cooking according to the manufacturer's instructions. Remove the neck and giblets from the chicken cavity, then rinse the chicken and pat it dry with paper towels.
  • Mix the salt, brown sugar, and chili powder in a small bowl until well combined. Rub 1 1/2 teaspoons of the salt mixture inside the chicken. Stir in 1/4 cup of marmalade into the remaining salt mixture until well blended. Set aside.
  • - Open the can of beverage and measure out 2/3 cup. Set aside 3 tablespoons for later use. Add 2 teaspoons of the reserved orange-flavored beverage to the marmalade mixture, stirring until it reaches a brushing consistency. Spray the outside of a half-full can of beverage with nonstick cooking spray and place it in a shallow baking pan. Carefully balance the chicken over the can, pushing down until it stands upright in the pan. Rub the chicken's skin with oil.
  • Once ready to grill, carefully transfer the chicken and can from the pan to the grill for indirect cooking, ensuring the chicken is balanced. Cover the grill and cook for 1 1/4 to 1 1/2 hours until the chicken juices run clear and a thermometer inserted in the thickest part of the thigh reads 180°F. In the last 30 minutes of cooking, generously brush the chicken with the marmalade mixture.
  • Using thick hot pads and tongs, transfer the chicken and can from the grill to a clean baking pan or platter. Carefully twist and remove the can from the chicken. Discard any remaining beverage in the can. Allow the chicken to rest for 5 minutes before carving. In a small microwave-safe bowl, mix 1/3 cup marmalade with the remaining 2 tablespoons plus 1 teaspoon of carbonated beverage. Heat the mixture in the microwave on HIGH for 30 seconds or until warm. Serve the warm marmalade mixture with the chicken.
