Grilled Orange Chicken Thigh Skewers with Pineapple and Vegetables

Orange-marinated chicken skewers with bell peppers, pineapple, and onions for a burst of vibrant flavors. Prep ahead for maximum taste!
Ingredients:
  • 0.25 cup coconut aminos (soy-free seasoning sauce)
  • 0.5 cup orange juice
  • 2 tablespoons avocado oil
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon chile-garlic paste, or to taste
  • 3 boneless, skinless chicken thighs, each cut into 5 pieces
  • 0.25 cup pineapple juice
  • 3 (24-inch) long metal skewers
  • 0.75 cup red bell pepper, cut into 1-inch pieces
  • 0.5 large onion, cut into 1-inch pieces
  • 1 small zucchini, cut into 1/4-inch slices
  • 1.5 cups fresh pineapple chunks
  • 1.5 cups hot cooked rice
Instructions:
  • In a large resealable bag, mix coconut aminos, orange juice, avocado oil, ginger, and chile-garlic paste. Season with salt and pepper, then add chicken. Massage the bag to evenly coat the chicken with the marinade, remove excess air, seal the bag, and arrange chicken in a single layer in the bag.
  • Chill for a minimum of 4 hours, or overnight, gently rotating the bag occasionally.
  • Transfer the marinade to a small saucepan, pour in the pineapple juice, and bring to a lively boil over medium-high heat. Let it simmer until the mixture reduces to 1/2 cup, around 5 to 7 minutes. Remove from heat and let it cool.
  • Thread each skewer with a delicious combination of chicken, bell pepper, onion, zucchini, and pineapple, alternating the ingredients until the skewer is full.
  • Get that outdoor grill heating up to the perfect medium-high temperature and give the grate a light coating of oil.
  • Place skewers on the hot grill. Brush with marinade, reduce heat to medium, cover with lid, and grill for 4-5 minutes. Turn skewers and brush with more marinade. Watch for flare-ups, adjust skewers as needed. Check doneness with an instant-read thermometer, ensuring it reaches 165°F (74°C).
  • Present the skewers on a bed of steaming hot rice.
