Sauté beet greens and kale with bacon and garlic for a flavorful and thrifty side dish.
Ingredients:
  • 1 tablespoon olive oil
  • 1 slice bacon, trimmed of fat and cut into small pieces
  • 2 cloves garlic, pressed
  • 6 leaves beet greens, stems cut into 2-inch pieces
  • 2 leaves kale, ribs and stems removed, chopped
Instructions:
  • In a large skillet over low heat, gently sauté bacon in olive oil until crispy, for around 3 to 5 minutes. Mix in garlic and continue to cook until fragrant and golden brown, approximately 1 to 2 minutes.
  • Combine beet stems and kale in the skillet, cover, and cook until kale wilts, approximately 3 minutes. Introduce beet greens, cover, and cook until vibrant and wilted, for 1 to 2 minutes. Season with salt and pepper to taste.
