Turn beet greens into a tasty side dish in just 15 minutes with garlic, red pepper flakes, and zesty lemon juice.
Ingredients:
  • 2 bunches beet greens, stems removed
  • 1 tablespoon extra-virgin olive oil, or to taste
  • salt and freshly ground black pepper to taste
Instructions:
  • Boil a large pot of salted water. Add beet greens and cook uncovered until tender, about 2 minutes. Drain in a colander.
  • Submerge in ice water to quickly halt the cooking process.
  • After chilling the greens, thoroughly drain and roughly chop them.
  • In a large skillet over medium heat, warm olive oil. Add garlic and red pepper flakes; sauté until aromatic, about 1 minute. Toss in chopped greens, season with salt and pepper, and cook until just heated through, about 1 to 2 minutes. Serve with lemon wedges.
  • Garnish with fresh lemon wedges before serving.
