Flavorful roasted beet dip with orange, garlic, ginger, and coriander.
Ingredients:
  • 2 pounds fresh beets (without greens), peeled and cut into 1/2-inch-thick wedges
  • 2 cloves garlic, thinly sliced
  • 1 (1 inch) piece fresh ginger root, peeled and thinly sliced
  • 1.5 teaspoons ground coriander
  • 0.75 teaspoon finely grated orange zest
  • 3 tablespoons orange juice
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons butter, cut into bits
Instructions:
  • Heat the oven to 425 degrees F (220 degrees C) while lining a rimmed baking sheet with a large piece of aluminum foil.
  • Spread the beets on the baking sheet with garlic and ginger. Season with coriander and salt, then generously drizzle with oil. Seal the ingredients in foil to make a packet.
  • Bake the beets in the preheated oven until they are tender enough to be pierced with a knife, approximately 30 minutes. Take them out of the oven and allow the beets to steam in the foil packet for 10 minutes.
  • Unwrap the beets, garlic, and ginger, along with any juices, and place them in a food processor. Blend with orange zest, orange juice, and vinegar until almost smooth with small lumps. Then add the butter and continue blending until fully incorporated.
