Tangy beet salad with smoked tofu, apple, and creamy horseradish yogurt dressing. Perfect as a main dish.
Ingredients:
  • 6 beets
  • salt and ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 0.5 (7.5 ounce) package smoked tofu, diced
  • 0.5 apple, diced
  • 1 (8 ounce) container plain yogurt
  • 1 teaspoon maple syrup
Instructions:
  • In a large pot, submerge beets in cold lightly salted water and bring to a boil. Lower the heat, cover, and simmer for about 40 minutes until beets are tender. Drain and rinse under cold water, then peel and chop into cubes.
  • In a skillet over medium heat, sauté smoked tofu until warm and slightly browned, about 2 to 3 minutes. Transfer tofu to a bowl and mix with beets and apple.
  • In a small bowl, combine yogurt, horseradish, maple syrup, salt, and pepper. Pour over the salad, mix thoroughly, and allow the flavors to meld for about 15 minutes.
