Classic German beet salad with a zesty apple cider vinaigrette, perfect hot or cold.
Ingredients:
  • 4 beets
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon white sugar
  • 0.25 teaspoon salt, or to taste
  • freshly ground pepper to taste
  • 1 teaspoon caraway seeds
Instructions:
  • In a saucepan, cover beets with water and boil until fork-tender, about 45 minutes. Drain, cool, peel, and slice into a large bowl.
  • In a small bowl, whisk together apple cider vinegar, olive oil, sugar, salt, and pepper. Pour the mixture over the beets and toss to coat. Sprinkle caraway seeds and mix again. Refrigerate for 2 hours before serving.
