Beetroot hommus

Colorful beetroot dish, free from gluten, eggs, and dairy.
Ingredients:
  • 150g fresh beetroot, cooked until tender, peeled
  • 400g can chickpeas, drained and rinsed
  • 1 clove garlic
  • 48.00 gm tahini
  • 42.00 gm lemon juice
  • 2.50 gm cumin
  • 6 large fresh mint leaves
  • Extra virgin olive oil, to serve
Instructions:
  • In a food processor, blend ingredients until smooth. Mix in 2-3 teaspoons of water, 1/2 teaspoon of salt, and add pepper to taste. Finish by drizzling with a touch of extra virgin olive oil before serving.
