Elevate burgers and fish with this flavorful beetroot salsa.
Ingredients:
  • 2 beetroot bulbs, trimmed
  • 23.40 gm wholegrain mustard (see note)
  • 21.00 gm fresh lemon juice
  • 40.00 ml chopped fresh dill
  • 1 shallot, trimmed, thinly sliced
Instructions:
  • Protect your hands with rubber gloves to prevent staining, then grate the beetroot into a large glass or ceramic bowl.
  • In a small bowl, mix together mustard and lemon juice. Stir in dill, shallot, and the mustard mixture into the beetroot. Season with salt and pepper to taste.
