Hamburgers with beetroot salsa

Authentic Aussie burger: Must-have beetroot topping.
Ingredients:
  • 500g beef mince
  • 35g breadcrumbs
  • 62.50 ml finely chopped mint
  • 10.00 gm sweet paprika
  • 4 slices Swiss cheese
  • 1 x 450g tin baby beetroot, drained, chopped
  • 100g cherry tomatoes, quartered
  • 1 small red onion, peeled, finely chopped
  • 62.50 ml chopped coriander
  • 40.00 ml finely shredded mint
  • 20.00 ml red wine vinegar
  • 4 wholemeal bread rolls, split, toasted
  • Whole-egg mayonnaise, to serve
  • Butter lettuce leaves, to serve
  • Potato wedges, to serve
Instructions:
  • In a medium bowl, mix together the beef, breadcrumbs, mint, and paprika. Season with salt and pepper, then use your hands to combine thoroughly. Divide the mixture into four equal portions and shape each into a 10cm patty. Cover with plastic wrap and let it rest in the fridge for 30 minutes.
  • Preheat the grill on high and heat a large non-stick frying pan over high heat. Cook the patties for 3-4 minutes per side until they are golden brown and done to your preference.
  • Top each patty with a slice of cheese, then place them on a baking sheet. Broil in a preheated oven for 1-2 minutes, or until the cheese is melted.
  • In a small bowl, mix together the beetroot, tomato, onion, coriander, mint, and vinegar.
  • For each serving plate, start with the bread roll base. Spread generously with mayonnaise, add a layer of fresh lettuce, then place the patty on top. Spoon over the delicious salsa and cover with the remaining bread roll. Enjoy right away alongside crispy potato wedges, if desired.
