Quick and easy chicken and dumplings made with juicy boneless chicken and fluffy baking mix dumplings.
Ingredients:
  • 2 tablespoons butter
  • 1 small onion, diced
  • 3 skinless, boneless chicken thighs, cut into cubes
  • 1 skinless, boneless chicken breast half, cut into cubes
  • 6 cups water
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 3 cubes chicken bouillon
  • 1 teaspoon poultry seasoning
  • 1.5 cups all-purpose baking mix (such as Bisquick®)
Instructions:
  • In a large pot over medium heat, melt butter until sizzling. Sauté onions until they start to soften, for about 3 minutes. Add chicken and cook until no longer pink in the center, approximately 10 minutes. Stir in water, condensed soup, bouillon cubes, and poultry seasoning, mixing well. Increase heat to medium-high and bring to a simmer.
  • Pour the milk into a mixing bowl, add the baking mix, and stir until a dough is formed.
  • Scoop dumpling batter into the bubbling soup. Lower the heat to medium-low, cover, and simmer for 10 minutes. Flip dumplings and simmer until cooked through, around 10 more minutes.
