Make easy New Orleans-style beignets - deep-fried, donut-like square pastries.
Ingredients:
  • 1 (.25 ounce) package active dry yeast
  • 1.5 cups warm water (110 degrees F/45 degrees C)
  • 1 cup evaporated milk
  • 0.5 cup white sugar
  • 2 eggs
  • 1 teaspoon salt
  • 7 cups all-purpose flour, divided
  • 0.25 cup shortening
  • 1 quart vegetable oil for frying
  • 0.25 cup confectioners' sugar
Instructions:
  • Prep all your outstanding ingredients.
  • Combine yeast with warm water in a bowl. Stir in evaporated milk, white sugar, eggs, and salt. Mix in 4 cups of flour until smooth.
  • Combine the shortening with the remaining 3 cups of flour, then cover and refrigerate the dough for at least 2 hours, or up to 24 hours.
  • Roll out the dough on a floured surface until it is 1/8-inch thick, then cut it into 2 1/2-inch squares.
  • In a deep pot, heat oil until it reaches 360 degrees F (180 degrees C).
  • Fry the beignets in batches until golden and puffy. If they don't rise to the surface, the oil needs to be hotter. Use a slotted spoon to take them out and let them drain on paper towels.
  • Generously dust the hot beignets with confectioners' sugar before serving for a delightful treat. Enjoy!
