Cinnamon Apple Beignets with Caramel Sauce

Apple puffy clouds with caramel drizzle and cinnamon dust.
Ingredients:
  • 0.5 cup 2% milk
  • 0.5 cup apple cider
  • 0.5 cup unsalted butter, cubed
  • 1 tablespoon Stevia In The Raw®
  • 1 teaspoon ground cinnamon
  • 4 eggs
  • 1 granny smith apple, cored and finely diced
  • 0.5 cup Sugar In The Raw®
  • 0.25 cup Stevia In The Raw®
  • 0.33333334326744 cup apple cider
  • 1 teaspoon vanilla
  • 4 cups vegetable oil for frying
  • 1 teaspoon cinnamon
Instructions:
  • In a medium saucepan, heat milk, 1/2 cup cider, butter, Stevia In The Raw, and salt until boiling.
  • Add flour and cinnamon all at once, then vigorously stir with a wooden spoon over the heat until the mixture comes together. Keep stirring until the dough is smooth and pulls away from the sides of the pan.
  • Place the dough in a bowl or stand mixer to cool for 10 minutes, stirring occasionally. Gradually add eggs one by one, ensuring each one is fully incorporated before adding the next. The dough should become smooth and shiny. Gently mix in the apples and set the mixture aside.
  • Combine Sugar In The Raw®, Stevia In The Raw, and water in a small saucepan. Stir and cook over medium-high heat until the sugar dissolves. Increase heat to high and cook syrup until it turns deep amber, swirling the pan as needed to prevent burning.
  • Take the mixture off the heat and gently pour in 1/3 cup of cider. Keep stirring until it becomes smooth. If the caramel appears too thin, simmer it until it thickens and turns syrupy. Mix in vanilla and 1/2 teaspoon of salt. Set it aside.
  • Heat the oil in a large heavy pot or deep skillet to precisely 365 degrees Fahrenheit.
  • Fry heaping spoonfuls of dough in batches of 8 until evenly golden.
  • Remove using a slotted spoon and let excess oil drain on paper towels.
  • Continue the process with the rest of the dough.
  • Before serving, generously drizzle the beignets with luscious caramel sauce and then sprinkle them with fragrant cinnamon.
