Cinnamon Apple Sweet Potatoes

Thanksgiving favorite: Sweet potatoes & apples in a sticky cinnamon-nutmeg sauce.
Ingredients:
  • 6 sweet potatoes
  • 6 large apples - peeled, cored and sliced
  • 1.25 cups white sugar
  • 0.25 cup cornstarch
  • 1.25 teaspoons salt
  • 2 tablespoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 2.5 cups water
  • 1 tablespoon butter
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly cooked dish.
  • In a large pot, cook sweet potatoes in salted water until just tender. Drain and let steam dry briefly. Peel and slice into 1/2-inch pieces. Layer sweet potatoes and apples in a 9x13-inch baking dish.
  • In a saucepan, combine sugar, cornstarch, salt, cinnamon, and nutmeg. Add water and butter, then simmer over medium heat until thickened and clear, stirring often for 5 to 10 minutes. Pour the mixture over the sweet potatoes.
  • Roast in the oven until the apples are soft and sweet potatoes are golden brown on top, approximately 1 hour.
