Delicious chicken lo mein in a bento box, ideal for any meal.
Ingredients:
  • 1 pound skinless, boneless chicken breasts, cubed
  • 1 medium egg
  • 4 teaspoons cornstarch, divided
  • 1 tablespoon sesame oil
  • 1 (12 ounce) package Chinese egg noodles
  • 2 tablespoons vegetable oil, divided
  • 3 cups frozen stir-fry vegetables
  • 2 tablespoons cold water
  • 1 cup chicken broth
  • 3 tablespoons soy sauce
  • 3 tablespoons oyster sauce
Instructions:
  • Combine the chicken, egg, 2 teaspoons of cornstarch, and a drizzle of sesame oil in a bowl.
  • Bring a large pot of water to a boil. Cook noodles for about 4 minutes until soft. Drain and rinse with cold water to stop cooking.
  • In a sizzling wok, sear the vegetables in 1 tablespoon of vegetable oil on high heat until tender, for about 3 minutes. Use a slotted spoon to transfer the vegetables to a bowl.
  • Pour the rest of the vegetable oil into the wok, then stir-fry the chicken until cooked through, approximately 5 minutes. Use a slotted spoon to transfer the chicken to a bowl.
  • Combine the leftover cornstarch and water in a bowl until smooth, then pour into the wok. Stir in chicken broth, soy sauce, and oyster sauce, and simmer over medium heat for about 3 minutes until the sauce thickens slightly.
  • Return the vegetables and chicken to the wok, stirring until the sauce coats everything evenly. Turn off the heat and allow it to sit for 3 minutes. Serve on top of noodles in a bento box.
