Try this: Make crunchy Japanese fried chicken for a tasty bento box lunch!
Ingredients:
  • Peanut or corn oil for frying
  • 2 tablespoons cornstarch
  • 2 boneless skinless chicken breasts, cut into 1/2-inch strips
  • 1 egg, beaten
  • 3/4 cup Progresso™ panko bread crumbs
  • 1 teaspoon garlic-pepper blend
Instructions:
  • In a 3-quart saucepan, heat 2 inches of oil over medium-high heat until it reaches 350°F.
  • In a medium resealable bag, add cornstarch. Shake chicken strips in the bag to coat them evenly, then discard any excess cornstarch.
  • In a small bowl, crack the egg. On a small plate, combine bread crumbs and garlic-pepper blend.
  • First, coat the chicken strips with beaten egg followed by rolling them in the bread crumb mixture. Fry half of the chicken in hot oil for about 2 minutes until they are golden brown outside and cooked through inside. Drain them on paper towels before repeating the same process with the remaining chicken. Once done, allow the chicken to cool completely before packing it into a bento or lunch box. Store the cooked chicken in the refrigerator.
