Savor Chef John's quick and flavorful Berbere spiced chicken breast inspired by Ethiopian cuisine, ready in under 30 minutes.
Ingredients:
  • 1 skinless, boneless chicken breast half - lightly pounded to an even thickness
  • 1 teaspoon kosher salt
  • 1 tablespoon berbere spice blend, or to taste
  • 2 teaspoons butter
  • 1 lime, juiced
  • 2 teaspoons tomato paste
  • 0.25 cup chicken broth, or as needed
  • 0.33333334326744 cup coconut milk
  • 0.5 teaspoon berbere spice blend, or to taste
  • Salt to taste
  • 1 tablespoon chopped cilantro
Instructions:
  • Season both sides of the chicken breast with a tantalizing blend of salt and aromatic berbere spice.
  • In a skillet over medium-high heat, gently melt butter until it reaches a light brown color. Next, swiftly add the chicken breast to the skillet and cook each side for 2 to 3 minutes. Lastly, transfer the cooked chicken to a warm dish.
  • Pour the lime juice, tomato paste, chicken broth, and coconut milk into the skillet and stir to scrape up the flavorful bits. Allow it to simmer while stirring, then mix in 1/2 teaspoon of berbere spice and a pinch of salt.
  • Add the chicken breast back to the skillet over medium-low heat. Cook for 4 to 5 minutes until the chicken is fully cooked and the sauce begins to thicken, basting the chicken with the pan juices. Use an instant-read thermometer to ensure the chicken reaches 165°F (74°C) in the center.
  • Garnish with chopped cilantro and drizzle with pan sauce before serving.
