Popular Ethiopian stew with dried beef, tomatoes, berbere seasoning, injera, and spiced clarified butter.
Ingredients:
  • 2 red onions, chopped
  • 0.33333334326744 cup vegetable oil
  • 1 tablespoon garlic paste
  • 4 ripe tomatoes, chopped
  • 3 cups water, divided
  • 14 ounces dried beef
  • 2 tablespoons Ethiopian berbere seasoning
  • 0.5 cup Ethiopian kibbeh (spiced clarified butter)
  • 2 teaspoons salt
  • 2 pieces injera (Ethiopian bread)
Instructions:
  • In a large saucepan over medium-high heat, sauté onions until they start to brown, about 5 minutes. Add vegetable oil and garlic paste; cook until fragrant, about 5 minutes. Mix in tomatoes and cook until softened, 5 to 7 minutes.
  • In a saucepan, combine 1/2 cup water, dried beef, and berbere seasoning. Cook over medium heat for about 10 minutes until flavors meld. Gradually add 1/3 cup water every few minutes for approximately 20 minutes until beef is tender and sauce thickens. Stir in kibbeh and salt.
  • Break 1 injera into bite-sized pieces and mix gently with the sauce. Serve the beef and sauce on top of a whole injera.
